Please do it outside.
There will be dust which will be created when sanding the wood or the epoxy and this will be picked up by your furnace (if you have GFA) and sent around your house. Normal air currents will also draft this dust throughout the house. Will your wife like that?
Secondly, from the organic vapor comment. Yes, it is an inhalation hazard and some people are truly allergic to said vapors. Others have a contact irritation to the dust. I see people with lung issues about 1-4 per month on inhalation issues so please trust me when I say use an organic vapor mask and do it outside with GOOD ventilation. On the mask, use a silicone rubber mask with screw on cartridges. The cartridge does AGE and goes bad, meaning you might have to break down and buy more than one set. From the sanding perspective, N100 rated dust cartridges are the best (so far) that are out there. Old standard was N95.
Sure, you can do it anywhere you want with no protection. Seen it done. Cared for a couple that have done it and reacted to it. Rare, sure, but why take the chance. JMO...
Good luck building, let's see some pics when you get started.
