White Bean Wild Turkey Chili
I used the scraps from a Brinkman water bath smoker cooked wild turkey. I did add alder late in the cooking process to give it some smoke flavor.
TBsp canola oil
2 medium onions coarse chopped
4 fine diced garlic cloves
2 Tbsp. of chili powder
1 Bay leaf
1/2Tbsp.Cumin
1/2 Tbsp. chopped Oregano
2 Tsp. red pepper flakes
3lbs coarse chopped turkey meat
4 16Oz. cans of Cannellini beans
2 cans low sodium chicken stock
3/4 C. of lite or fat-free sour cream
Add these just prior serving:
1/3 C 0f chopped cilantro
2Tbsp fresh lime juice
