Goose recipe question

Howdy everyone,

I have a very specific question. One time, in the not to distant past, I used a crock pot recipe for cooking goose, which called for an entire quart of heavy whipping cream. I stumbled upon this recipe somewhere in the vast internet,did not save it, can't remember the details and now, can not find it again.

Does the use of a quart of whipping cream to cook the goose in, sound familiar to anyone? The cream was NOT used as a marinade, the goose was cooked in a bath of the cream. The only thing else I recall is, I believe green peppers were in the ingredient list as well. Very simple list of only 4 or 5 ingredients.

The cream came out almost like a stroganoff sauce, although I did not use it as such.

I know there are tons of goose recipes out there, but I'd really like to track this one down if I can.
 
I remember it from the DHBP cookbook. But I never used the recipe.

Do you have a copy of the recipe buried somewhere? I'm trying to hunt down the full recipe with ingredient list. Maybe some one else has a copy of the cookbook and can help me. (I don't have a copy)
 
Dave, I looked through the DHBP cookbook and didn't find any recipe using cream. Sounds interesting though, please post if you find it again.

Pete, Thanks for your time and effort. I don't know what internet rabbit trail I took, but if I find it, I'll certainly share the recipe. My grandson really liked it and he is a pretty picky eater and does not like to try new things. Plus it was easy to put together and cook.
 
It almost sounds as if it would be a Strogonoff recipe off sorts. I imagine the whipping cream would have a somewhat similar effect as buttermilk.
 
I looked and its not in my copy of the cook book.

The name was something like "Heart Attack Snow Goose".

I'm still looking in my other files!
 

I checked my library of game cook books, and waterfowling books.

No Dice.


Nor could I find it in Everyday Cooking with Dr. Dean Ornish, who also wrote, Dr. Dean Ornish's Program for Reversing Heart Disease... HHHHHEEeeeeHHHHeeeeeeHHHHeeeee

Hi Dave,

Sounds good. I braised a pork butt a few years ago in heavy whipping cream. I'll bet it would be very good with goose. Heavy whipping cream is 36% butter fat. So, I would imagine adding sweet onions, garlic, shallots, and some dry Italian mix herbs would compliment the goose very well.
