Pecan wood for keels?

I have a friend with a pretty generous supply he's willing to give me. I've got a couple of pieces that have been cut , squared and curing for the past year.

I have a moisture meter on order and was wondering at what % would be good to cut to final dimensions without checking? And has anyone used for keels before.

If it will hold up I would like to use for my north Atlantic rig..and if I have enough, for my timber rig as well.

Seal well. Hickories have a reputation for absorbing moisture but should be beautiful keels.
