Brant Recipes

I would be very interested for recipes that make Brant edible.

On Long Island their diet renders them inedible. If someone has a good recipe I would be deeply indebted.

There's edible...and there's fit to eat.
Pretty much everything is edible,....not everything is fit to eat, Brant being one of them. [cool]

We used to have a herd of feral cats living at our marina, we'd toss them mergansers, buffleheads and other misc. ducks including some brant,
Guess which ones didn't get eaten?

If starving wild cats won't eat a brant.....[huh]
 
One of the best things I've done is buy a jerky slicer and multi-level dehydrator. All our Canada's, Brants, and Snows get turned into jerky. I've already eaten and given away 5 lbs of jerky between family and friends. They all loved it.

I don't get fancy either. Cabela's jerky kits. Follow instructions, watch a dehydrator video or two on YouTube and you're off to the races.
 
Breast out the birds, removing all of the fat. I do not do this, but, you might want to soak in salt water for a while.
Dry the breasts, slice into 3/8" slices and sear in a skillet. I like to use olive oil with crushed garlic cooked lightly, then removed.
The sear should be just enough to leave the meat rare to medium rare. Eat with broken loaf of good, crusty bread, and a good ale, beer, or red wine.
Salad is an option.
DO NOT TRY ROASTING THE WHOLE BIRD!!! YOU WILL BE SORRY!!!![w00t]
Just as an aside--If something is considered so unpalatable, why hunt it? There are other birds that CAN be hunted. If you aren't going to eat it, then don't shoot it!!!![mad]

Roger on breasting the bird, taking the legs, and removing all fat.

I do not open the birds.

Also if you are very through, you can grind the meat for other uses. Some kind of cured sausage, hot stick, etc.

The things folks do with Golden Eyes, Mergansers, and such.

Trial and error, you bet.

Lotta work ya, but the birds give their life, so it is worth it, or do not shoot em.
 
I just cut all the fat from the breast and coated with blacked spice, and grilled the breast from the brant and broadbill I got today.
Both were delicious, and had zero fishy, or strong flavors. The must have been eating well.

Its amazing how much jerky you can give away to people whom otherwise don,t enjoy duck or goose. I myself made up 6 lbs. of duck jerky just prior to Christmas and it got devoured by recipients. Between duck chili, duck/goose summer sausage and jerky I can keep the freezer count manageable.

We shot 26 Canada's in special September season here in 2019. We split the birds between 3 guys.

One guy unfortunately lost his haul in a power outage during an ice storm.

I used up my haul on jerky which is already consumed by myself, friends and family. One of the guys dropped off 5 lbs to me the other day to make some sweet and spicy jerky. So that's on deck. I imagine all that will be consumed during our hog hunt in February.

Whatever is left is getting made into snack sticks, which is not much. You're right. People go wild for this stuff! Hoping I can kill some Brant these next couple weeks to add to the jerky supply.
